Harvest Monday

Woohoo! I can do Harvest Monday for the first time in ages. I put the pictures of the sweet potatoes earlier this past weekend and Sunday I picked these five cucumbers.
Look at how many of them were on the vines even after that picking!
This second planting has done so well. Thank you so much, EG for convincing me to do it. Today I picked 10 more cucumbers equalling a little more than 4 pounds. I was thinking to just take all of the cucumbers and put them in the teacher's mail room, but I think I may just have enough to make a few half pints of kosher dills. I know they're not pickling cucumbers and will get pretty soggy, but they're still yummy and I still have a spice packet left, so why not. Anyone ever try putting onion rings in kosher dills? I've got some of those I could stand to use up as well. There will be more cucumbers on the vine to give the faculty/staff within the next two weeks. I'll can these and give them the others when they're ready.
Thanks again, EG. Look at me! I didn't get a single cucumber last year and now I've gotten 42 pounds worth. Ah the difference of a square foot garden. I'll never go back.
The morning comes early. Sweet cucumber pickling dreams.

  2. 42 lbs of cucumbers? Wow that is a lot of cucumbers. I'd be eating cucumber salad for months and canning so many.

    I put onions (and garlic) in with my pickles all the time. Onion rings to me says breaded and fried onions, but I'm guessing that is not what you mean, though it is an amusing image - talk about limp and soggy.

  3. Very good! I'm glad your 2nd round are doing well for ya. Have ya thought about making Granny's sweet pickle relish? It only calls for 4 cups of chopped cucumbers, which would be like...twice as many as in your harvest picture. My 2nd round in the main box are still producing as well, but not as good as yours. Tomorrow is a BIG day for EG...hehe, I can't wait!!!

  4. Thanks Grafix! Daphne, I supposed I should say onion slices. Onion rings would be rather nasty, although I hear people eat fried pickles....The total of cucumbers is since May, so it's not all at once. WOW! that would be nuts.

  5. EG, I'm not a fan of sweet pickles. I need that good ole kosher dill. We're due for a frost real soon-like, so these next 5-6 are most likely the only ones that are going to make it to maturity. It was a great run; almost better than the spring harvests!!

  7. Yum! They look beautiful. I don't know -- cucumber salad with yogurt dressing? It might cool down a hot Indian food meal.
