That Zucchini Relish

Back at the end of June, I was so inundated with zucchini that I had no idea what to do with it, so I decided to make some zucchini relish. I never really tried it as it smelled like lighter fluid, but I put it in the cabinet just because.

Tonight I made some spatzle with some sauteed onions, garlic, kielbasa and then layered with cheese and baked and when it was done, I mixed in some of the zucchini relish. It was so, so good! The smokey, meaty taste of the sausage and blandness of the spatzle was completely complimented by the sweet relish. I was a happy girl and it was very filling. Of course, there are no pictures because we ate it all before I could think to take any.

What I did get pictures of was this cucumber I picked today which I apparently missed yesterday.

How I missed it, I can't tell you. Sucker came off wanting a cheeseburger it was so large. I think it ate the yippy dog across the street.

The morning comes early. Sweet gardening dreams.

  1. I'm always amazed on how green veggies can hide in the garden. Beans, cucumbers, and zucchini - how can they hide so well. I think they should be red, purple or neon orange so we can see them.

  3. Totally agreed, Daphne! At the very least they should grow with homing signals, flares, or strobe lights.

    I was actually thinking about how nice it was to grow purple beans when I found this monster, even though I didn't care for them at all.

  4. Did you say spaetzle? It is absolutely one of my favorite German dishes, although some may argue it's just a side. I love mine with melty cheese (usually gruyere and fontina) and caramelize onions. Do you make yours from scratch (THE BEST), or from a box? I was surprised to read "blandness" and "spatzle" in the same sentence, because I always smother mine in onion-y cheesy goodness and would never consider it bland. My version is usually rich and decadent, like a fancy dumpling version of mac-n-cheese!

  5. Well you can't just leave a glowing recomendation like that and not give the recipe!!! I've never had it mixed with anything before, so doing it like this (mixed with other things) was new to me.

    But I confess....the spatetzle was from a box.

  6. Whatcha holding, a baby cucumber? I can beat that one all to heck. I had one go under the fence and grow under Pat's beans. I happened to try to pull the vine back to my side yesterday, and found this monster attached. And it was neon orange to boot. I'll have to go get a picture of it before it rots.

  7. I could barely read through your post, because as soon as you said spatzle, I was thinking about all the yummy german food that goes nicely with it. That's so weird that the relish smells like lighter fluid. LOL! What? Wow, that cucumber ate a burger and a side order of large fries!

  8. @thyme2garden - I agree with Ribbit! Recipe, please. I've never tried to make spatetzle before but you have me totally tempted. Then again, anything covered in cheesy, oniony goo is good. :)

  10. Did you use white vinegar in your relish? I can't stand the smell or taste of that stuff, so I always use cider vinegar. I don't care if it does change the color of the pickles, it just tastes better.

    My verification word sounds like what I'd like to do today, "restie". Alas, there's no "restie" for the wicked".

  13. Ribbit and NancyinLA, I would love to share my recipe, but I don't quite have *my* recipe yet. The last time I made it was about a year ago, and I used a combination of several recipes I found on allrecipes.com. I meant to write down my modifications, but I didn't, because really, I'm more of an improviser in the kitchen. But you have inspired me to make this dish again, and this time I will write down exactly how I made it. And I'll take pictures. I even have an actual spaetzle maker, so I don't have to improvise with a colander like I did last time. What a mess that was. I'll package it all nicely into a blog post. Stay tuned, I'll try to do this within the next couple-three weeks.
