Green Bean Goodness and Bus Driver Appreciation Day

Seriously. I've been so happy with the green bean harvest this fall, but this is beyond fantastic. I still have a full bucket in the refrigerator and went out and pulled these two pounds this afternoon. I thought I'd giggle if I got one solid picking, but I'm on number three or four! Woohoo!Now I've just got to use them all. I could blanch and freeze them, but they just never taste the same. It's not like zucchini which you can masque in casseroles. Frozen green beans taste like...well, frozen, limp green beans. Looks like some may be taking the trip to school in the morning. I know they'll make people happy.

I took a handful of them tonight and made use of them in a soup I made with tortellini, ground beef (sausage would have been better), garden garlic, oregano, basil and rosemary, tomatoes, onions and carrots. Usually I would have used black beans, but these green beans did just fine and were so tasty in the soup that I'll do it this way again.
Green beans seem like the only things I've got to harvest! Check out Daphne's, however, to see the bounty everyone else is hauling in.
The week of October 18 is National School Bus Safety Week and here in Georgia, it also coincides with Monday, October 18 being Bus Driver Appreciation Day. Bus drivers are an integral, yet under recognized and appreciated force without whom out schools could not function as we want them to. You can show support for your students' bus drivers this week or for the holidays with a small bus driver key fob from Keychains for a Cause.   2. I'm the opposite - I think frozen beans are great! Mine are always still kind of crunchy/squeaky. I blanch mine for 3 minutes, then into the freezer. When I cook them I steam them for another 3-5 minutes. Maybe it is the variety you are growing?

  3. I also like mine frozen, but I most often put them into something else, like a casserole or soup. That is one fabulous harvest, and the bus key chains are great!!

  4. I agree with you, I love fresh beans so much more than frozen beans. But if you are the queen of beans and harvesting pound after pound of them every week, then I guess you have no choice but to freeze some and squirrel them away for the winter! :)

  5. I'd love some fresh green beans, but our vines dried up back in August! We had some frozen beans last night. I cooked them with some taters, added a couple of slices of bacon for flavor. I couldn't really tell they weren't fresh.

    That soup looks yummy!

  6. Wow, fantastic green bean harvest! My fresh ones are long gone but I do have some in the freezer. I don't like the frozen ones served as a side vegetable but they are fantastic in soup.

  7. I usually freeze some of my green beans. Not a lot, but enough to put in soups. I figure they get so overcooked anyway you can't tell the difference.

  8. Nice beans! I have bean getting a pretty good bean harvest this year too, but by this time they are getting smaller and smaller and more curly! But, my bottom freezer drawer is full of them! LOL! Ya they don't taste the same, maybe I am blanching too long! Enjoy them!
