There is one variety whose name escapes me right now that the Spanish eat as tapas. The fun of it is that it is playing pepper roulette. Most are mild peppers, but occasionally you hit the hot one. It is also said that "corking" is a sign of heat, although I haven't necessarily found it to be true. We love playing "roulette" with our poppers, mixing a few different weeks of harvest together in one batch for a nice surprise, LOL!
